Produced from mature vineyards in the Pays D’Hérault region of Languedoc in Southern France. This diverse region is characterised by the moderating Marin, Mistral and Tramontane winds which help create a unique climate.
The Cinsault grapes are picked at optimum ripeness during the night to ensure that they reach the winery cool. A brief maceration on skins produces the delicate salmon pink colour before the must undergoes a cool ferment to protect the delicate, cherryish fruit profile. Once fermented, the wine is racked off gross lees before a two month rest on fine lees before bottling.
