Montsablé Pinot Noir, IGP Pays D'Oc

Our Pinot Noir comes from around the village of Puicheric, close to Carcassonne. Influenced by both the Aude river and the Canal du Midi, this is a landscape of low rolling hills, shallow soils and controlled yields. The soils are chalky clay and the cooling effect of the strong northerly winds, which results in cool night time temperatures, provides ideal conditions to manage yield and achieve high quality. The results are small bunches and small berries which enable us to make perfectly balanced, perfumed Pinot.

 

Traditional Burgundian methods are used for the vinification - pre fermentation maceration to extract colour and perfume before tannin followed by a gentle fermentation ensure we get maximum varietal intensity. A relatively low temperature ferment (24°C) helps  to preserve the delicate and subtle notes of Pinot Noir.
