The Syrah and Mourvedre were grown in the Puicheric area of Languedoc, deep in the heart of the Minervois appellation. All of the growers involved practice sustainable agriculture. The Grenache is sourced from warmer sites in the Puisserguier sub region of St Chinian.
Each varietal is vinified separately. The Grenache is handled gently, with a cold maceration prior to ferment encouraging the prettiest characters of the variety. Syrah receives a warmer ferment in order to extract colour and concentration while the Mourvedre receives very gentle hand plunging , similar to the very best Pinot Noir.
After the first racking, the varieties are blended before a period of maturation to ensure that the resulting wine is balanced and harmonious.
